Chef Eric Morrissette's Pro Tips for the Perfect Sear

1. Start with a clean pan.
Before anything goes in, wipe the pan out. A clean surface is the foundation for even browning.

2. Use a high quality, high smoke point oil.

3. Watch for the ripple.
