
Veggie Frittata
Pacific Biodiesel HR Manager Ian Martins' Veggie Frittata was one of the winners in our 2025 Employee Holiday Recipe Contest using Kuleana Hawaii Grown Sunflower OIl.
Ingredients:
- Six (6) Eggs
- ½ Onion
- 3-4 Mushrooms (button or cremini)
- 1 Cup of Spinach
- 1 Cup of Shredded Cheese
- 1-2 Tablespoons of Kuleana Sunflower Oil
- Salt and Pepper to taste
Recipe:
- Whisk six (6) eggs in a bowl/container of choice (set to the side)
- Preheat oven to 350º degrees Fahrenheit
- Grab a nonstick pan and turn up to medium heat
- Pour in 1-2 Tablespoons of Kuleana Sunflower Oil into heated pan
- Finely chop ½ of an onion and begin to sauté your onions in pan
- Chop 3-4 mushrooms and toss them in with your sautéed onions
- Once your onions and mushrooms cook about halfway through, throw in your 1 cup of spinach
- Add salt and pepper to taste; cook down spinach
- Evenly add your whisked eggs into the sauteed vegetable pan
- Turn off stovetop heating surface
- Place your dish into the 350º degree oven and bake for 10-minutes
- Take out your frittata from the oven and evenly spread your shredded cheese
- Place the frittata back into the oven and bake for another 3-5 minutes or until cheese melts
- Turn off oven and remove your veggie frittata; allow 10-minutes to cool
- Cut your veggie frittata into eight (8) evenly distributed pieces
